An Easy Summer Dinner Recipe

Do you struggle with what to make for dinner? I often do!

 

Summer is my favorite season, once it’s set in. The long days leave so much more time for hanging out outside.  Once of the best things about summer is that dinners can be quick. But why?

In the summer time, the weather is warmer, so our digestive fire is stronger – that means that we have better digestive energy for the warm summer season.   We use up warm energy when we digest food, so having warm weather means our digestion is a bit stronger.

As a lover of simplicity, but also a person simply born with a weaker digestive system, this is great because it means I can have a salad for dinner without having some consequences to face.  So here’s one of my favorite simple, quick and refreshing summer dinners that lets me get back out the door to enjoy some outdoor time before the sun goes down. Here’s an easy summer dinner recipe. It’s great for too hot days when you need something light and refreshing, and not too heavy.

Watermelon Feta Salad w/ Prosciutto

Ingredients: (per person)
Cubed watermelon, 2 cups
Feta Cheese (or goat cheese) 1/8 cup
Balsamic Vinaigrette
Prosciutto 5 pieces

Directions:
Lay down the watermelon, top with cheese. Drizzle vinaigrette on top. Roll prosciutto on side or cut up into pieces and sprinkle on top.

Super simple! And really great on a hot day.  Watermelon is cooling so it’s wonderful on a hot day, the prosciutto adds a bit of protein, and the flavors work really well together . Try it, and let me know what you think on the blog:
